Happy April Fools Friends!

imageI can’t remember the last time it was a true 1st Friday and April Fools, so my lame attempt at a prank was posting now! I  wish Phil and I were in the city so we could see the opening of the different art exhibitions. I used to love the Old City 1st Friday art openings while Phil and I were in Philadelphia but it all got very crowded and crazy so we couldn’t enjoy it. Even though we’ve been here a year we still haven’t done a 1st Friday in SF…I think May might have to be the month. We’re in  Tahoe for some spring skiing and a break from the city. The ski season is coming to a close for us, only a few weeks left, and we’re both looking towards bikini season, haha!imageSince it is officially the first Friday of this month, its a plated Foodie Friday and this week its fish, veggies, and a delicious range of flavors: on the menu is a thai curry tilapia, cheesy vegetable linguine, and gruyere grilled cheese. image.jpegComment below with your email address for a chance to receive a free box!

Foodie Friday

Happy First Friday Friends!

image.jpgPhil and I are skipping the mountains this weekend for a little alone time and some R&R. Phil is returning from his business trip this evening so its the perfect excuse for the two of us to curl up with a nice bottle of wine and chill. I am taking on more classes starting next week so I’m really trying to mentally & physically prepare for the shift. It’s a good thing I know just what to do.image For me, there is no better way to prepare than to take the best possible care of myself…which includes fueling up for success! Thanks to Plated, that’s no problem, and since its the beginning of the month, 3 more delicious meals are about to arrive on my doorstep. I don’t know if I am going to make a change to try another delivery service anytime soon, just because I don’t think the meals are quite as healthy but I am still doing my research!imageFor now, I am diving in fork first to these delicious dishes and I encourage you to give Plated a try! Phil and I are heading to our ski share on North Lake Tahoe for some sunny ski weather, time with friends, and a weekend away from the chaos!hero_White_Pizza_with_Sriracha_Buffalo_Chicken_and_Creamy_Ranch_0079_1Along for the ride are some awesome Plated meals to keep us warm and full of energy as we cruise the slopes of Squaw. That’s right, it’s the first Friday of the month so it’s a Plated inspired Foodie Friday! I am super excited to make some root vegetable chili with corn bread, and Phil is excited to dive into buffalo chicken pizza come game time! Since we’ll be sharing with friends I’m trying to make everything more ‘appetizer-ish’ so I’ll be turning the black bean burritos into more of a dip & chips situation.hero_Black_Bean_Burritos_with_Guacamole_0044_1I love getting a delicious box of fresh ingredients delivered on the day I choose. There are a lot of options out there but since Plated lets you truly customize your meal options, I can swap meat, veggie, and fish choices whenever. Welcome to the Weekend!

I am so excited for the 1st Foodie Friday of the month. This and every 1st Friday of the month will be a special Plated edition. Phil and I have used Plated a few times in the past with a lot of success, so this year, I thought it would be cool to highlight some of the interesting recipes they come up with and share them with all of you!plated 1-1Some of you might be thinking, “what happened to this week’s diet regime?!?!?” and I want you to rest assured the only deviation is dinner and each of these recipes definitely healthy. Plated Perfection

We’re just 48 hours from our flight back east and both our stomachs’ are in knots! I still can’t believe the wedding is almost here…it doesn’t feel real! Knowing these last days leading up to our departure would be chaotic, I decided to give one of those meal delivery services a try. My choice was based solely on the fact I’d been seeing their banner ads pop up…I picked Plated…it also didn’t hurt the special was 3 dinners for 2 at just $48 with shipping.photoThe process was simple: signed up, picked the meals (fish, meat and veggie options), and the box showed up on my doorstep. I mildly obsessed over the tracking/delivery & worrying about the perishable items staying fresh BUT that was completely unnecessary because everything was safely stored and labeled in an insulated refrigeration bag, complete with ice packs. Realistically, that box could’ve sat there until I got home from a normal work day and things would have been perfectly fresh!photoEach meal was very easy to make, came with clear instructions, and was absolutely delicious! Aside from the fact this made dinner a snap, Plated introduced Phil and I to new food! photo (1)Granted, I’ve made a version of the braised pollock we received but I had never made dukkah spiced flatbread with creamy feta sauce, nor had I attempted a thai chili and tofu soup before….both of which I will be making again soon! Plated is also very low commitment which is great! You pay for the weeks you want, and you can skip/cancel anytime…we just got the first box as mentioned, and wont be getting another until the week we get back from our honeymoon – talk about convenient! I am certainly going to give other meal delivery services a try to see how they compare but Plated has set the bar high and is worth a try for anyone considering this sort of service!
