Nothing says summer like juicy, ripe, bright red tomatoes! This side or lunch is the quintessential summer dish. Matched with chili lime tofu and cilantro this tomato black bean salad is both refreshing and nutritious.
It’s simple!
All you need is: one ripe tomato, a little fresh cilantro, half cup of black beans, a quarter roasted onion, chili powder, garlic powder, fresh lime juice, extra firm tofu, salt and pepper. I usually dry and cube the tofu first and let it marinade in the lime juice, 1/2 tsp. chili powder, dash of garlic powder, juice from half a lime, salt and pepper. While those flavored infuse into the tofu I chop the cilantro, tomatoes, roasted onion and throw them in a bowl (season with salt and pepper). Drain 1/2 cup of black beans and add in, then add the tofu and the liquid it marinaded in and toss!
This takes no more than 20 minutes and it’s delicious! The health benefits from the tomatoes and black beans are out of this world and the fact they keep you fuller, longer doesn’t either!
You’re welcome to marinade the tofu for longer before throwing it into the mix, sub grilled shrimp or chicken…whatever, just give it a try!
