Summer Salad

With summer right around the corner – literally its 10 days away – I thought it was appropriate to share one of my favorite summer salads: the caprese.

tomTraditionally this is served as sliced tomatoes, sliced mozzarella and full basil leaves but I personally prefer chop and chiffonade when making it for a picnic or office lunch. For dinner parties or special occasions the traditional presentation is much more dramatic and attractive – especially when kissed with a little aged balsamic and extra virgin olive oil but I digress…

This delicious, refreshing salad is full of nutrients and low on calories making it perfect as an afternoon lunch or side for dinner!

One of the best parts, aside from the health benefits for your vision, skin, hair, bones and blood sugar, is how easy this is to throw together. All you need is tomatoes (really ANY kind), mozzarella cheese (again, ANY kind will do), basil, salt and pepper. I used one beefsteak tomato with one ovaline buffalo mozzarella ball and 8-10 medium basil leaves. If you want to kick it up a little you can drizzle with a little balsamic vinegar and extra virgin olive oil but its simply delicious all on its on!
